Elizabeth "Lizzy" Catherine Anna Eby, 59, of Plainview, Minnesota passed away Tuesday, August 31, 2021, at Seasons Hospice House in Rochester. She was born September 4, 1961, in Ann Arbor, Michigan to Richard and Elizabeth (Worland) Maxey. Liz grew up in Ann Arbor attending Pattengill Elementary, Tappan Junior High, and graduated in 1979 from Pioneer High School. She married Kumalo Dawson (later divorced). On October 3, 2003, she married Kenneth Eby in Ypsilanti, Michigan. Ken and Liz renewed their vows on September 20, 2014 at St. Joachim's Catholic Church in Plainview, Minnesota

Liz had a strong Christian faith and enjoyed spending time studying scripture and prayer. She volunteered her time singing for many Masses and loved the contemporary praise music. Lizzy loves flowers and was once questioned by Plainview Police for taking pictures of neighborhood flowers from her car.

Liz is survived by her loving husband, Kenneth Eby of Plainview, children, Steve (Jenna) Dawson of Ypsilanti, MI, and Maria Dawson of Seattle, WA; two grandchildren, Samuel and Rebekah Grace; siblings, John (Meredith) Maxey of Ann Arbor, MI, Mary (Greg) Neau of Plainview, and Christopher Maxey of Hornell, NY.

Friends and family may visit from 4:00 to 8:00 p.m. on Thursday, September 9, at the Schleicher Funeral Homes, Plainview Chapel, and one hour prior to the service at the church.

The Funeral Mass will be at 11:00 a.m. on Friday, September 10, at St. Joachim's Catholic Church in Plainview with Father William Becker officiating. Burial will take place at Arbor Crest Cemetery in Ann Arbor, Michigan at a later date.
